Superman Beef Casserole: Jackpot's Fave!
My friend, Vicki cooks for her dog too...and she passed along this fabulous recipe for us!
Superman Beef Casserole
3 pounds ground beef
2 cups brown rice
2 Tablespoons olive oil
1/2 cup diced raw carrots
1/4 cup chopped fresh kale
1/4 cup diced celery
1 cup chopped cooked green beans
Brown the meat in the olive oil. Remove meat from pot with a slotted spoon. Use paper towels to press any remaining grease out of the meat. Prepare brown rice according to package directions. Do not use instant rice.
Once rice has cooked, stir in all of the other ingredients and replace lid on pot. Let it sit until the pot cools off.
Yield: 16 cups
Keeps in the fridge for 3 days and the freezer for 3 months

This sounds delicious! Love that it includes kale.
