Gimme Chicken Meatballs
2 cups quick rolled oats
2 large eggs
2 pounds ground chicken or turkey
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Preheat the oven to 350.
Combine all the ingredients in a large bowl and mix well, using your hands. Scoop out a Tablespoon or two of the mixture and roll it into a ball. Continue with the rest of the mixture.
Place the meatballs on an ungreased shallow baking pan. Bake for 40 minutes.
Cool to room temperature before serving.
Store in a covered container in the refrigerator for up to 3 days, or wrap well and freeze for up to 2 months (thaw before serving).
