What a Game!



We truly enjoyed our Superbowl Sunday!!

The girls especially liked the fact that we were all together in the pit with the fireplace going and having SNACKS!

You will see in the slideshow that we had Meatball Sliders, Mini Hotdogs wrapped in Crescent Rolls, and Special Patriots Pretzels!

Do you see LadyBug's HAPPY tail?

The girls were in their glory and so was I...after that last quarter!  

It was a nail biter of a game...but honestly...I do believe that the Patriots and Tom Brady deserved to win!  They put it all together at the end!

Juicing for Dogs! Who Knew??



As most of you know, I am a Pinterest Addict.  While perusing the other day, I ran across a pin about a blog where the woman was talking about Juicing for her DOG!

Of course, I had to cruise right on over to her blog:  http://www.lovelygreens.com/2014/07/juicing-for-dogs-and-you-too.html and check out what she had to say!  This is a very interesting recipe and one I will try for the girls, but I am not sure if they will eat it or not.  I am NOT in to juicing in any way, shape, or form...but my daughter occasionally does it so I will pass this info on to her. 

If you try it on your dogs...let me know...I'd love to hear if your dogs liked it!


The Green Energizer
you may have to double up if you want to make one for you and your dog.

¼ medium pineapple (I remove the skin and cut it into medium pieces)
1 large handful of spinach (see tips section)
¼ medium cucumber
½ medium courgette/zucchini
1 medium carrot
15 sugar snap peas
1 small handful ice cubes (for the human version, not the dogs)

Getting Ready to Celebrate All Things Irish!



OK, so WE are not Irish, but Mama is!  Her grandmother was born in Ireland!

It is SO good!!


 5 cups rice chex cereal, divided

~ 5 oz white chocolate or white vanilla candy melts

~ 5 oz green candy melts (Found in craft stores like Michaels and Hobby Lobby)

~ 4 tbsp Bailey’s Irish Cream, divided

~ 1 cup powdered sugar, divided

~ 1 cup chocolate chips


Mix it all together and VOILA!!

Irish Chex Mix For Those of Us Who Go Green!



INGREDIENTS

1 11-ounce bag white chocolate chips

8 Cups Rice Chex
1 cup pretzel sticks
1 11.4-ounce bag dark chocolate mint M&M's
Green Sprinkles
INSTRUCTIONS

In a heat-safe bowl, melt the chocolate chips in the microwave for 30 seconds on 50% power. Stir and repeat until the chips are completely melted.


In a large bowl add the Chex, pretzel sticks, and dark chocolate mint M&Ms. Pour the melted white chocolate over the top and carefully stir until coated. Spread the mixture out over parchment paper and add the sprinkles. Let cool and harden, about 1 hour. Break apart and store in an air-tight container up to 5 days {but I promise it won't last that long}.

    Red and Green Spaghetti with Ham: The Canine Version!




    We are sharing our friend Vicki's recipe for Red and Green Spaghetti with Ham with you today!  It's really easy to make and the girls just love it!

    We have made a couple of changes to Vicki's original recipe...the girls do NOT like beets...so we have substituted broccoli...which they really like and are very used to as they eat a lot of broccoli!  I also use a tiny bit of tomato sauce in theirs...just to give it a little Italian flavor!!

    1 package spinach spaghetti
    1/2 bowl of chopped broccoli
    2 cups chopped pre-cooked ham steak
    A couple tablespoons of tomato sauce

    Break the spaghetti into one inch pieces.  Cook the spaghetti according to package directions.  It should be cooked until soft.  Blot the ham with paper towels until it is COMPLETELY dry.  Chop it into small pieces to get two cups.

    Drain and cool the spaghetti, then mix all of the ingredients together.

    Keeps in the fridge for about 3 days.

    **Be sure to use ham sparingly when feeding it to dogs. The girls do not get ham very often.  I rotate the meats that they eat every day.

    Baking for our Furry Friends



    Are you in to Baking for the holidays??

    Remember our furry friends!

    Here's a few recipe ideas for you to try for your best friend!

    Noel Nibbles

    2 tablespoons honey
    3 cups whole-wheat flour
    1 cups white flour
    1 tablespoon baking powder
    1 tablespoon cinnamon
    1 tablespoon nutmeg
    2 3/4 cups water
    1/4 cup unsweetened chunky applesauce
    1 egg, slightly beaten
    1/2 cup coarsely chopped peanuts

    Preheat oven to 350 degree Fahrenheit. In a bowl, mix together honey, flour, baking powder, cinnamon and nutmeg. Add water, applesauce and egg and stir, mixing well. Add nuts. Spoon into a greased muffin tin, filling each cup two-thirds full. Bake for 30 to 35 minutes until lightly browned. Cool on a rack and store in sealed container. Makes 16 muffins.

    Festive Holiday Cookies

    1/2 cup unsweetened applesauce
    1 egg, slightly beaten
    1/2 cup chunky peanut butter
    1 teaspoon vanilla
    1 1/4 cups water
    3 cups whole-wheat flour
    1 cup white flour
    1/2 cup cornmeal
    1/2 cup quick-cooking oats
    1/4 cup chopped peanuts

    Preheat oven to 350 degrees Fahrenheit. In a large mixing bowl, combine applesauce, egg, peanut butter, vanilla and water. Mix well. Add flours, corn meal, oats and peanuts and mix well to form a dough. Turn dough onto a floured surface and knead until thoroughly mixed together. Roll out dough to 1/4 inch thick and cut out shapes. Place on greased baking sheet and bake for 45 minutes until lightly browned. Cool on rack. Makes 30 cookies.

    Superman Beef Casserole: Jackpot's Fave!




    My friend, Vicki cooks for her dog too...and she passed along this fabulous recipe for us!

    Superman Beef Casserole

    3 pounds ground beef
    2 cups brown rice
    2 Tablespoons olive oil
    1/2 cup diced raw carrots
    1/4 cup chopped fresh kale
    1/4 cup diced celery
    1 cup chopped cooked green beans

    Brown the meat in the olive oil.  Remove meat from pot with a slotted spoon.  Use paper towels to press any remaining grease out of the meat.  Prepare brown rice according to package directions.  Do not use instant rice.

    Once rice has cooked, stir in all of the other ingredients and replace lid on pot.  Let it sit until the pot cools off.

    Yield:  16 cups

    Keeps in the fridge for 3 days and the freezer for 3 months

    Canine Easy Salmon Muffins



    This recipe is an original from a good friend of ours!!  She makes all of Jackpot's meals!!  He is a very lucky little guy!!

    Easy Salmon Muffins

    1 package of JIFFY Muffin Mix or any cornbread muffin mix
    1 5-oz. can of skinless, boneless salmon
    1/3 cup of blueberries

    Follow directions on muffin mix box.  Drain salmon, add to mix.  Add blueberries (I use fresh frozen ones).

    Bake following directions on muffin mix box.

    Refrigerate or freeze immediately.

    Keeps in fridge for two days or in freezer for two months.

    As Promised! The Infamous Cherry Vodka Recipe!!



    Cherry Vodka


    2.5 Cups of Cherries
    12.7 ounces of Vodka
    5 ounces of Simple Syrup*
    2-6 drops of Lemon extract


    Simple Syrup
    • One part water
    • Two parts sugar
    On medium heat—slowly heat the mixture of water and sugar—stirring frequently to ensure the mixture doesn’t boil. When the sugar is completely dissolved remove from heat and put aside.
    (If possible use a double boiler—it is easier).
    The mixture can be sealed and kept for several months. You can also use Brown sugar or a Light colored honey in place of sugar


    Vodka Cherry preparation 
    • In a quart jar, add cherries that have been pitted and cut in half.
    • Add vodka and water to cover cherries
    • Tightly cover contents in jar and let cherries soak for 2-3 weeks
    • SHAKE DAILY !!
    • Filter the contents thru cheesecloth first, then thru a coffee filter.
    • Add the Simple syrup and lemon extract to the remaining filtered liquid
    • Top off with distilled water bringing the total volume to 25.4 ounces.

    Off The Beaten Path: The Food Edition




    I'm straying a bit off the beaten path today because I think everyone has been hit hard by the rising costs of groceries.  Has anyone else noticed that each trip to the grocery store yields half of the product for twice the cost??  OK, maybe that is an exaggeration, but seriously...it is getting to be ridiculous.  

    In my research, I ran across an interesting website called Budget Bytes.  It truly is quite amazing what this writer has been able to accomplish by spending a great deal of time putting together this terrific website to assist others with their grocery budgets.  

    I love the fact that the writer has put together not only the recipes, but also a "Go To" site where one can find the best deals in the area and you can even create a Recipe Box where you can keep your favorites.  A lot of the research usually done by us has already been done by Budget Bytes.  Go ahead and check it out...I find it to be quite the interesting website. 

    The site even calculates how much it will cost you to make each dish!

    There is absolutely no compensation or product samples involved in this endorsement.  I am simply calling it as I see it.  I think it is a very well developed site with a ton of information.  

    The good news is that it has the potential to save you money!!

    Crock Pot Santa Fe Chicken

    • 24 oz (1 1/2) lbs chicken breast
    • 14.4 oz can diced tomatoes with mild green chilies
    • 15 oz can black beans
    • 8 oz frozen corn
    • 1/4 cup chopped fresh cilantro
    • 14.4 oz can fat free chicken broth
    • 3 scallions, chopped
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp cumin
    • 1 tsp cayenne pepper (to taste)
    • salt to taste
      Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crockpot.  Season chicken breast with salt and lay on top.  

      Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred.  Return the chicken to slow cooker and stir.  Adjust salt and seasoning to taste.   Serve over rice or tortillas and your favorite toppings.

      Tasty Tuesday: The Dehydrator Recipe Edition

      Dog Bark



      1 - 1¼ Pounds Lean Ground Beef

      ¾ Pound Sweet Potato (1 large)

      ¼ Pound Green Beans (1 handful)

      Peel and cut sweet potato into chunks and begin boiling in two cups of water.

      Trim green beans and cut into smaller pieces. Add to pot with sweet potato when potato chunks are half way to soft.

      Continue cooking until sweet potato chunks are soft enough to mash.

      Pour off, but retain, the cooking water.

      Cook ground beef in a fry pan over medium heat until brown.

      When the meat is browned and cooked through, drain off liquid and pat meat dry with paper towels.

      Add cooked ground beef to pot with sweet potato and green beans.

      Add 1½ cups of the retained cooking water and mash with a potato masher.

      Divide mush into two or three parts and run through a blender until smooth.

      Spread thinly on dehydrator trays covered with non-stick sheets and dry at 145° F for approximately six 

      hours. After four or five hours, flip bark over and dry without the non-stick sheets.

      Bark is not brittle when dry, so it does not present a choking hazard.

      It should feel completely dry and will break into pieces easily.

      Tasty Tuesday: Cinnamon for Our Furry Friends!!



      Of all the items in my pantry, the one I never want to run out of is cinnamon. My dogs and I enjoy this amazing, deliciously fragrant spice every single day of the year!!  The dogs sometimes get a pinch of cinnamon sprinkled over their food.  I like it in and on everything from toast, lemonade, and chai tea to baked apple pie, hot chocolate, coffee and rice pudding!!

      Not only does cinnamon smell and taste great, it has many health benefits!!

      Cinnamon is a small tree that grows in India, Sri Lanka, Indonesia, Brazil, Vietnam, and Egypt; its bark is dried and rolled into cinnamon sticks, then ground into powder.

      There are four varieties, but Ceylon cinnamon and Cassia cinnamon are the most popular; Ceylon, also called true cinnamon, is sweeter, lighter in color, and more expensive than Cassia, which is the darker type of cinnamon more commonly found in supermarkets and Starbucks. Whichever variety you choose, it's definitely worth it to spend a bit more on organic cinnamon, which tends to be even more fabulously fragrant than its non-organic counterpart.

      Traditionally, cinnamon has been used around the world to remedy flatulence, nausea, and diarrhea.   It is also believed to boost energy, vitality, circulation, cognitive function and overall brain health, AND to improve the digestion of dairy products.

      In one study, sniffing cinnamon was shown to result in improved brain function - test subjects performed better at memory and attention after a whiff of this FABULOUS spice. So if you're working with your dog on learning new tricks, definitely offer him or her a sniff of cinnamon before you begin your training session!

      Recent studies have shown that just half a teaspoon of cinnamon a day helps to regulate blood sugar and raise insulin resistance; it actually boosts the body's ability to use insulin to improve blood glucose levels. This is vital for anyone at risk for Diabetes.

      Other studies reveal that cinnamon is antifungal; it works to combat Candida albicans, the fungus that causes yeast infections. These infections are often resistant to medication, but not to cinnamon. (Dogs who suffer from allergies are often prone to yeast infections).

      Cinnamon is also antibacterial, and slows down the spoilage of food. Researchers at Kansas State University found that cinnamon even prevents the growth of E. Coli bacteria in unpasteurized juices!

      Tasty Tuesday: The Early Valentine's Edition



      If you have been reading my blog for awhile, each year I make this addictive Valentine's Chex Mix snack!! Check it out!!!


      4 1/2 cups Rice Chex cereal

      1/2 cup white vanilla baking chips

      1/4 cup peanut butter

      2 tablespoons butter or margarine

      1/3 cup powdered sugar

      1/4 cup red, white and pink candy-coated chocolate candies

      2 tablespoons red or pink sprinkles



      * Place cereal in medium bowl. In small microwavable bowl, microwave vanilla chips, peanut butter and butter uncovered on High 1 minute to 1 minute 30 seconds, stirring every 30 seconds, until melted and smooth.

      * Pour peanut butter mixture over cereal, stirring until evenly coated.

      * Place 1/2 of the cereal mixture in 1-gallon food-storage plastic bag. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper or foil; cool about 15 minutes. (I find it takes closer to an hour...so it's not so sticky!)

      ~Here's a tip though...you may have to make a double batch if you are sampling as you go along!!

      Tasty Tuesday: The Non-Vegetarian Version!



      I have to admit...my girlz love BEEF!!! They don't get it all that often, but here's a recipe for you to try for something different!

      2 3/4 cups whole wheat flour
      1/2 cup powdered milk
      1 teaspoon salt
      1/4 teaspoon garlic powder
      1 egg
      6 tablespoons vegetables oil
      8-10 tablespoons water
      2 small jars of strained baby food...beef flavor! (or you can use chicken, lamb or liver)

      Preheat oven to 360 degrees.

      Mix all ingredients together in a large bowl and knead for about 3 minutes. Roll out to 1/2 inch thick. Cut with bone-shaped cookie cutter and place biscuits on an ungreased cookie sheet.

      Bake in preheated oven for 20-25 minutes.

      Makes about 2 dozen biscuits.

      Store them the same way you would store people cookies. You can also freeze these in ziplock freezer bags...the girlz prefer them to be slightly microwaved to heat them up a bit...they think they taste better!!
