Getting Ready to Celebrate Green!

We are getting ready to celebrate St. Patrick's Day this weekend!  I will be doing some shopping for some things that are GREEN!  OK, so Chloe and LadyBug are not Irish, but  I am!  My paternal grandmother was born in Ireland!

Yes I realize that is an old photo...I still miss my LadyBug every day.  I cherish all of the photos I have of the girls together.

5 cups rice chex cereal, divided

~ 5 oz white chocolate or white vanilla candy melts

~ 5 oz green candy melts (Found in craft stores like Michaels and Hobby Lobby)

~ 4 tbsp Bailey’s Irish Cream, divided

~ 1 cup powdered sugar, divided

~ 1 cup chocolate chips

Mix it all together and VOILA!!

The Other Pics from St. Patrick's Day!

We usually go to Wegmans for the Corned Beef and Cabbage dinner on St. Patrick's Day.  Even though I am Irish...I do not like it...so the only way Ben is going to get it...is to go to Wegmans.  Their food is always good...I usually get the Chicken French.

While we were there, I took a few pics of the St. Patrick's Day Decorations and Flowers that they had on display...

Hope you all enjoyed your day!

Happy St. Patrick's Day!!

May you always have
Walls for the winds,
A roof for the rain,
Tea beside the fire,
Laughter to cheer you,
Those you love near you,
And all your heart might desire!

Have a little green beer...and enjoy your day!!

Irish Chex Mix For Those of Us Who Go Green!

INGREDIENTS

1 11-ounce bag white chocolate chips

8 Cups Rice Chex
1 cup pretzel sticks
1 11.4-ounce bag dark chocolate mint M&M's
Green Sprinkles
INSTRUCTIONS

In a heat-safe bowl, melt the chocolate chips in the microwave for 30 seconds on 50% power. Stir and repeat until the chips are completely melted.

In a large bowl add the Chex, pretzel sticks, and dark chocolate mint M&Ms. Pour the melted white chocolate over the top and carefully stir until coated. Spread the mixture out over parchment paper and add the sprinkles. Let cool and harden, about 1 hour. Break apart and store in an air-tight container up to 5 days {but I promise it won't last that long}.
